Editor's Note: This recipe was originally published on November 7, 2016. Since then, it’s been freshened up with new pictures, commentary, and made even more delicious.

While I enjoy sweet potatoes in a variety of ways, including sweet potato casserole, mashed sweet potatoes, or sweet potato pancakes, nothing beats a warm bowl of creamy soup on a chilly day,

This soup can be enjoyed on its own, as a side to a big salad, or in a toasted soup bowl or Dutch Oven Bread. Here are a few more reasons to love it:

  • Silky smooth and creamy.
  • It's the perfect balance of sweet and savory.
  • Made with aromatic flavors from onion and garlic.
  • Satisfying and comforting.

I usually make a big batch of this soup and then divide and freeze leftovers for later.

Ingredients you'll need

To get started, you'll need the following ingredients:

Sweet Potato Soup Recipe (Silky Smooth) - Real + Vibrant (2)
  • Sweet potatoes: When shopping for sweet potatoes, look for Garnet, Jewel, or Beauregard varieties. These will have an orange flesh and reddish-brown skin.
  • Full-fat coconut milk: This soup uses dairy-free milk to add flavor and creaminess.
  • Vegetable broth: Or substitute with water.

How to make sweet potato soup

Once you have the ingredients, take the following steps to prepare the soup:

1. Cook garlic and onion: Heat a large pot or Dutch oven over medium-low heat. Add oil, garlic, and ginger. Once the garlic starts to appear transparent, add the onions and cook until they appear transparent, about 5-7 minutes.

2. Add remaining ingredients: Add the sweet potatoes and increase the heat to medium. Add salt, pepper, coconut milk, and vegetable broth.

Storing and reheating

This soup can be made a few days in advance, refrigerated, and reheated when ready to serve.

  • Fridge: This easy sweet potato soup makes excellent leftovers. Once the soup has cooled down completely, store in individual air-tight containers for up to 5 days in the fridge.
  • Reheat: When ready to enjoy, warm in a saucepan over medium heat.
  • Freeze: Store in the freezer for up to 3 months. I recommend dividing the soup into serving sizes so you can easily reheat it. Thaw before reheating.

  • ½ teaspoon sea salt, more to taste

  • Add the sweet potatoes, vegetable broth, coconut milk, salt, and pepper. Increase heat to medium-high.

  • As soon as it comes to a boil, reduce the heat to medium-low to bring it to a simmer. Cover and cook for 25 minutes, or until the potatoes are cooked through.

  • Using an immersion blender, carefully blend until creamy and smooth. Alternatively, use your blender to process. You may need to do two batches, depending on the size of your blender. Adjust seasoning, if needed. Garnish and serve.

Notes

FAQs

How to make a smooth soup? ›

How do you make soup smooth? For a soup with a smooth consistency, work with veggies that are soft but not mushy. Additionally, streaming oil or cream into the soup can better emulsify the ingredients for a silkier texture. Blender features can also play a major role in getting your soup to the right consistency.

Why isn't my potato soup creamy? ›

Why isn't my potato soup creamy? Most creamy soups require you to add dairy of some sort into it. If you're finding your soup is too thin adding milk, add in cream instead, or whole milk.

How do you make potato soup not grainy? ›

So what do you do if you've made the mistake of using starchy potatoes in your soup? One trick to make your potato soup a little less grainy is to add some form of dairy –- cream, milk, or even cheese. Because dairy is generally creamy in texture, that characteristic will carry over into your soup.

How to make potato soup more thick? ›

Cornstarch. Cornstarch is a very effective thickener, and a little bit can go a long way. Add cornstarch to a small amount of cold water or other liquid (wine or stock) and whisk into a thick slurry. Then the slurry can be stirred into a simmering soup, a bit at a time to set the final consistency.

How to make soup silky? ›

Yes, you can definitely add cream to your soup. Whether you use a few tablespoons or a few cups, cream gives soup a silky mouthfeel and rich flavor. You can definitely add milk or other dairy as well, though it will taste gradually less creamy as you go down in percent.

Why isn't my soup smooth? ›

To achieve a silky-smooth texture, keep the blender running for at least 1 to 2 minutes in order to fully break down the solids. A common mistake is to not run the blender long enough. This results in a grainy-textured soup. The soup should be blended long enough to create a silky-smooth texture.

What makes soup creamier? ›

Add Something Creamy

Possibilities include cream, coconut milk, yogurt, or even pureed avocado. If you choose coconut milk, be aware that it will impart a sweet, coconut flavor, which might not be right for every soup. Yogurt will add tanginess.

What is the best thickener for soup? ›

Cornstarch is a great option as it is a natural thickening agent, but you'll want to be careful about how much you use. Start with 1 tablespoon of cornstarch whisked together with cold water to create a slurry. Then, gradually add the slurry to the soup, letting it boil for one to two minutes before adding more.

Does sweet potato thicken soup? ›

Starchy Vegetables

Grate a starchy vegetable like squash, pumpkin, sweet potato, or white potato into the soup and let it simmer. It will release that starch and help to thicken the liquid as it cooks.

Why does my potato soup taste bland? ›

Not Adding Acid. If a soup is tasting bland in the bowl, consider adding acid rather than salt. A squeeze of lemon or lime, or a dash of yogurt or sour cream can add brightness to the bowl.

Why does my potato soup have a weird texture? ›

Processing potatoes too much gives them a gummy, sticky texture that will turn your soup into slime after adding liquids. If you slice the potatoes too thin, or pulverize them in a food processor, the veggies release extra starch that gives your soup a gluey consistency.

Why do you add flour to the potato soup? ›

First, the starch in the potatoes will help thicken it. I also whisk together some flour and milk and add it to the soup to give it some body.

Does sour cream make potato soup thicker? ›

Cream, crème frâiche and sour cream add a luxuriously rich flavour and silky texture to soups, but you need to wait until the soup has cooled a little first, or they will curdle. Remove the soup from the heat and wait for a minute or two after it stops boiling, then stir in the creamy thickener of your choice.

Does cream cheese thicken up potato soup? ›

Why You Should Be Careful When Using Cream Cheese To Thicken Potato Soup. Cream cheese can be a delicious and tangy thickener for mashed potatoes so it stands to reason that it can also be used to add body to your favorite silky potato soup recipes — right? The answer is yes.

Why is my potato soup gummy? ›

It is important that the potatoes not be too finely chopped before cooking. If they are, too much starch will be released into the broth and a gummy texture will result. An unpleasant consistency can also result from the pureeing of the cooked soup.

How do you make soup not lumpy? ›

Add Flour Or Cornstarch

If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool. Add a few tablespoons of flour or cornstarch to the bowl and whisk until it's blended smooth.

How do you keep soup from getting lumpy? ›

Add flour or cornflour

Put a tablespoon of either into a small bowl and stir in 2-3 tbsp of the soup until you have a smooth mixture. Stir this back into the soup and bring it to a simmer. Cook for a few minutes to allow the starch granules to burst to thicken, and to cook out any flour flavour.

How to make soup smooth without a blender? ›

Just cook your vegetables until they are soft and use a potato masher to squish them down into a pulp. You could also use a ricer to get the same result. This is a great low-calorie way to get extra creaminess in your potato soups and clam chowders without adding extra cream or flour.

How to fix lumpy soup? ›

To fix an already curdled soup

Add an ice cube and lower the heat, whisking constantly; the shock can help bring it back together. Add a few additional tablespoons of cream warmed ahead of time to the soup mixture, whisking constantly. If the above do not work, whir the soup in a blender until smooth.
